Paleo Party Food : Chili Poppers

Paleo party food is usually easy to prepare & serve, and full of flavour and in this case – kick! Chili’s are a fabulous metabolsim booster with cleansing properties & packed full of vitamins and anitoxidants. With good fats from the smashed avocado this is a great entrée or served as finger food… but with this one you might want to keep a glass of water handy!

What you need:

Makes 24 poppers

12 large jalapeno peppers
1 1/2 cups chili
2 avocados

5 lbs ground beef
2 large onions, diced
3 bell peppers, diced
2 tbs ground cumin
2 tbs oregano leaves
2 tbs ground cilantro
1 clove of garlic
1 large tomato

Instructions:

Preheat oven to 190C. Line a baking tray and set aside for now.
Cut your jalapeno peppers in half, leaving the stem intact.
Remove the seeds and white membranes.
Fill your peppers (see instructions to filling below)
Roast the peppers uncovered for about 20 minutes, until chili is hot and the peppers are slightly charred.
While the peppers are roasting, roughly mash the avocado and season to taste.
When peppers are done, top with smashed avocado and serve immediately.

Filling:

Saute the vegetables until the volume in the pan starts to reduce and the onions become translucent.
Add seasonings to the pan; cook until fragrant and the volume continues to decrease in the pan. There should be little to no moisture in the base of the pan.
